Other foods

I suppose I should also mention that all my meals have been vegan, not just those I posted.

Breakfast is old fashioned oats and applesauce every day except Sunday. On that day I have an Amy's Breakfast Burrito

(or 2) I used to eat 2 every time I had it, but the doc wants me to cut down on fats and calories so only one now.

Lunch is usually a bowl of assorted veggies and a half cup of rice (used to be a cup or more), about a third cup or less of garbanzo beans (food of the gods!) and a drizzle of Annie's Naturals' Goddess salad dressing. When I run out of that, I make Susan V's lite goddess dressing that she made up just for me (Well, I asked and she made the recipe for all of us).

Sometimes I add a salad and leftover soup or whatever.

VeganMoFo Posts

I just found out that even though November 1st was National Vegetarian Day, the entire month of November is VeganMoFo - the Vegan Month of Food. Many members of the Post Punk Kitchen forums are making daily blog posts listing all the vegan recipes they made up.

Let's see, what have I made since the First?

Thursday Nov. 1 - Chicken Cutlet Sandwiches made from Bryanna Clark Grogan's recipe from the Everyday Dish DVD


Friday November 2 - Leftovers from Monday, Portobella and White Bean Cassoulet from Susan Voisin's Fat Free Vegan blog. Lunch was soup, leftover from the Tomato-Rice & White Bean soup in Veganomicon and hubby had leftover Thick Onion Soup from Bryanna's Almost No Fat cookbook.

Saturday - Pizza, using the Basil Tofu Ricotta recipe from Vegan with A Vengeance

Today - Burgers using an oatburger recipe that I think came from recipes in Dr. Neil Barnard's new book, Dr. Neal Barnard’s Program for Reversing Diabetes
